This is the first recipe we (Brandy & I) made. It was a fairly simple recipe to make. It was a little spicy but I used ranch to cool mine down a bit.. I think the next time I make it I'll put less hot sauce. I also think next time I'll use more potatoes. I think if you just use the seasonings for the potatoes you could make those as a side with something else, because I think the potatoes were one of my favorite parts about the dish.
Loaded Potato & Buffalo Chicken Casserole
Then I made an Oreo Ice Box Dessert
Ingredients
1 15oz. package oreos, crushed
6 T. butter, melted
1 8oz cream cheese, softened
1 c. powdered sugar
1 large box chocolate pudding(instant + milk to prepare it)
1 16 oz cool whip
Directions
1. Set aside about 1/4 cup crushed oreos. Mix remaining crushed oreos with the melted butter. Press into the bottom of a 9x13 pan.
2. Combine cream cheese and powdered sugar; mix well. Fold in 1/2 of the cool whip until well combined. Spread the mixture over the crushed oreo layer. Chill for 20 minutes.
3. Prepare chocolate pudding according to package directions. Spread over cream cheese layer. Chill for 20 minutes.
4. Spread remaining cool whip over the pudding layer. Sprinkle reserved oreos on top. Chill for 8 hours or overnight.
I absolutely loved this dessert! It was really really good! It is a process but not hard at all! I didn't let it chill for 8 hours.. I let it chill until we finished dinner. This dessert is added to my recipe box!

- 8-10 medium potatoes, cut into 1/2-inch cubes (I leave the skin on)
- 1/3 cup olive oil

- 1 TBS. freshly ground pepper
- 1 TBS. paprika
- 2 TBS. garlic powder
- 6 TBS. hot sauce
- 2 c. Fiesta Blend Cheese or a mix of Cheddar & Monterey Jack
- 1 c. crumbled bacon
- 1 c diced green onion
